    Potato Soup and Onion Scones

Well, we were supposed to have onion scones but I skipped over the part of the recipe where it said half and half so I didn’t have the right ingredients. I decided to wing it and I liked the finished product, as did Monkey and Princess P, Big Daddy not so much. Here’s what you need 5 potatoes, peeled and cubed (I think my mistake here was that I cut them too small and they sort of disintegrated) 2 onions, chopped (didn’t have onions either, I was so not prepared for todays meal at all) 4 cloves garlic, minced 3 (14-ounce) cans ready to serve chicken or vegetable broth 1…

    Cornbread with a little extra

We really love these around our house. What you need 2 boxes cornbread mix and the stuff to make it lil smokies shredded cheddar cheese I mix together the two boxes of cornbread mix as normal. I microwave the lil smokies for 1.5 – 2 minutes and then roll them in paper towels to soak up some of the juice. Then I cut them up and dump them, along with a couple of hand fulls of cheddar cheese in the cornbread mix. Mix it all up and then put it in muffin cups, I fill about 12 cups completely full. Then cook as directed. (When I make these I like…

    Pizza

Pizza sauce – nothing fancy about pizza sauce so no pictures of that. 1 can of tomato paste 1 can of tomato sauce then I seasoned to taste with oregano, cilantro, cumin, paprika, salt, pepper, Italian seasoning, basil, garlic I also added some red pepper it made the sauce way to hot for me but Big Daddy and Princess P liked it Pizza dough – this is from my bread machine manual. Now first I have to tell you that it said for a thick crust pizza it made 1 or you could divide it in half for 2 thin crust pizzas. We could have divided it into at least…

    Loaded Breakfast Muffins

I got this recipe off of Sparkpeople. There is quiet a bit of ingredients and it took awhile to get them put together but they were worth it. Princess P and I loved them. Big Daddy ate them but since they are healthy he’ll never admit that he liked them too. Monkey isn’t a fan of cranberries so he didn’t like them. This is what you’ll need 1 cup whole wheat flour 1 cup all purpose flour 1/2 cup oat flour (old fashioned oats ground in food processor) 1/4 cup old fashioned oats (whole) 1/2 cup oat bran (this I didn’t have) 1/4 cup wheat germ 1/2 cup ground flax…
