I have found a great new (at least to me) site, it’s called Eat Better America
What you need:
1/12 lbs extra lean ground beef
1 tablespoon olive oil
1 medium green bell pepper chopped
1 small jalapeno chile
2/3 cup chopped onion
2 cans black eyed peas drained and rinsed
2 cans fire roasted diced tomoatoes
1 1/4 tsp gound cumin
1 tsp garlic powder
1 tsp chili powder
1/2 tsp pepper
1 cup Bisquick Heart Smart mix
1 cup yellow cornmeal
1 cup fat free milk
- Heat oven to 375
- In 12 inch skillet cook beef over medium heat drain in colander
- in same skillet heat oil in medium heat add bell pepper, jalapeno, and onions cook stirring occasionally
- stir in beef peas, tomatoes, cumin, garlic powder, chili powder, and pepper bring to boil, then let simmer for 3 to 5 minutes
- spoon ingredients into baking dish
- stir together remaining ingredients and then spoon over beef mixture
**** if I were to make this again I would substitute the bisquick, milk, and cornmeal for cornbread we didn’t like the taste of this ****
- bake 30 to 35 minutes

1 packet brown gravy
about 4 cups frozen mixed veggies (I use green beans, carrots, and corn and don’t measure the veggies)
potatoes (I use 2 medium sized ones you want enough to make about 2 cups)
butter
shredded cheddar cheese
milk
Directions
- Preheat oven to 375 degrees
- brown meat, cook veggies as directed on bag/box, and boil potatoes
- mix beef, veggies, and gravy together
- mash potatoes with milk, butter, and cheese then put on top of beef and veggies
- sprinkle cheese on top of mashed potatoes then put in oven for 20 minutes

These would have been really great except we attempted to make them on the George Forman. Next time, we’ll use the grill.

Prep 15 min Total 42 min Makes 4 servings (1 skewer each)
Ingredients
- 4 new potatoes
- 1/4 cup ranch dressing
- 1 lb boneless beef sirloin steak, cut lengthwise into 1/2 inch thick slices
- 8 cherry tomatoes
Heat grill to medium high heat. Cook potatoes in boiling water 12 to 14 minutes or until tender; drain. Cool slightly
Reserve half of dressing. Thread meat, accordion style onto 4 skewers, alternating potatoes and tomatoes between folds of meat. Brush with remaining dressing
Grill 10 to 12 min or until meat is done, brushing with reserved dressing the last 2 minutes.
